Low FODMAP Harvest Salad

Do you love salads but “pay” for them later? Try my #lowfodmap Harvest Salad! It uses seasonal ingredients like pomegranate seeds and Delicata Squash with a homemade Apple Cider Vinaigrette

Pomegranates were an add on for my Hungry Harvest last week so I knew I needed to grab a couple to make a fun salad! Did you know the seeds are full of fiber, protein and vitamin C? Fodmappers keep them to less than 1/3 cup if you have an issue with Fructans.

Harvest Salad with Apple Cider Vinaigrette

Ingredients:

-2 6oz bags baby spinach

-2 Delicata Squash, roasted (or could use @traderjoes frozen Delicata Squash!)

-1/3 cup Pumpkin Seeds

-1/3 cup Pecans

-1/4 cup Pomegranate seeds

-1/3 cup quinoa 

-2 Tbsp feta 

Apple Cider Vinaigrette:

-2 Tbsp Apple Cider Vinegar 

-1 Tbsp olive oil

-1 Tbsp maple syrup 

-pinch of dried thyme

-pinch of sea salt 

Directions:

Add all ingredients to salad bowl. Mix vinaigrette ingredients separately, then pour onto salad. Enjoy!

Low FODMAP tips: keep your spinach to 2.5 cups or less to keep your belly feeling good!
